SAUVIGNON BLANC:  Light, bright typically clean with distinctive fruit flavours of citrus, pink grapefruit and slight tropical aromas when done well. It’s the perfect easy drinking wine that easily understood.  e Adelaide Hills is the best place to grow Sauvignon Blanc due to high altitude vineyards. Sauvignon Blanc is most delicate and pretty when grown around 450m above sea level. In the Adelaide Hills, this means the cool nights lock in great natural acidity and the warm days give lovely slow ripening conditions, all making the fruit vibrant and fresh.

Vineyard:  Clover Farm, Mt Barker.  Elevation and Aspect, 360 to 390 metres above sea level with gentle slopes (5 – 8%) generally facing towards the northwest.

Winemaking:  Low yielding vines, cane pruned. Fruit was picked at night to ensure cold fruit is delivered to the winery. 8 hours skin contact, cold fermented with small time on lees to build texture.
