Vineyard: Clover Farm (Mt Barker) Blocks 7 and 8
Elevation: 380-410 AMSL
Winemaking: Picked from the oldest vines on our Clover Farm vineyard. Whole berry fermented with a long cold soak prior to fermentation. 13 days on skins, with hand plunging and 02 spearing. Basket pressed and 18 months in 30% new French oak.
Nose: This wine offers a beautifully balanced nose with characters of blackberry, cassis, cedar, tobacco and star-anise.
Palate: This wine is ripe and round with flavours of forest fruits and raspberry compote. Savoury notes of roasted peppers, black pepper and clove greet the palate with well balanced and silky tannin.
