Vineyard: Clover Farm (Mount Barker) Block 2 and Mount Torrens
Elevation: 380-410 AMSL
Winemaking: Long cold soak prior to primary fermentation in 5 ton open top fermenters. Ferments were run hot. Hand plunged, 02 speared and foot stomped. Basket pressed. 18 months in 25% new French oak and 50% 2nd use French oak.
Nose: This wine boldly presents rich dark berries on the nose, black cherry, blueberry and plum while also showing hints of spice; a vineyard characteristic. Oak characters also show through, clove, chocolate and notes of vanilla.
Palate: The palate has a delicious intensity of dark fruits, dark red cherry, blueberry, blackberry and plum. This wine has a richness from the pristine oak that is delivered to the palate through chocolate, clove and pepper notes. This wine is well balance and finishes with silky tannin.
