The 2021 Howard Vineyard Amos Méthode Traditionnelle Blanc De Blancs. No.2
Winemaking: 100% Chardonnay. The fruit was hand picked early from low yielding vines, chilled and whole bunch pressed with primary fermentation using traditional EC-118 champagne yeast. Using a mix of stainless steel and 50% barrel fermented with partial malo latic fermentation to gives fullness but still retain freshness. This wine then undergoes traditional fermentation in bottles and is kept on lees for 36 months. Disgorged August 24.
Bouquet: Oyster shell, salt, sea spray with with aromas of lemon, stone fruit, red apples with notes of brioche and toast.
Palate: Vibrant lemon rind, stone fruit, key lime and grape fruit flavours. The Chardonnay offers great length and fresh acidity. A layered wine showing delicate use of oak and complexity from the malo lactic fermentation. Finishing dry with a hint of creaminess.
