The wine delivers flavours of lemon zest, stone fruit and blossom. These primary characters are then complimented with a nutty, vanilla-cream character from the use of the new French oak. A lemon compote flavour lingers on the palate producing a well balanced prime example of a cool climate Chardonnay. Luscious aromas of white blossom, lemon curd and fresh stone fruit, complimented by notes of brioche and hints of spring blossom. Pairs well with food given the high natural acidity. It is particularly well matched to creamy brie-style cheeses, pastas, chicken and seafood with butter sauces. Enjoy now or cellar for up to 5 years.
CHARDONNAY: The world’s most popular white wine, Chardonnay is a versatile white grape variety that originated in the Burgundy wine region in France and represents more then 1/3 of the total grapes grown in the Adelaide Hills. When enjoyed young, Chardonnay from the Adelaide Hills tends to show characters of lemon, lime and white peach. The best Chardonnays also show more developed characters such as subtle char, nuts and richness from the time in oak barrels.
Winemaking: This Chardonnay is hand-picked. The fruit is chilled, hand sorted and whole bunch pressed. The free run juice only goes straight into French oak barriques for fermentation. The wine is held there for 11 months. Wild fermentation is used to contribute to flavour and complexity and shows a true reflection of the terroir. Clones: Bernard 76 and 95
