2021 Howard Vineyard Amos Cabernet Sauvignon

CABERNET SAUVIGNON:  The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux, France. Cabernet Sauvignon is loved for its high concentration and age worthiness.  

Cabernet Sauvignon is well known for its firm tannins and full and rich taste, including such notes as blackcurrant, as well as woodsy flavors, such as cedar, oak, and herbs.

Vineyard: Clover Farm (Mt Barker) Blocks 7 and 8.  Elevation and Aspect:  360 to 390 metres above sea level with gentle slopes (5 – 8%) generally facing towards the northwest.

Winemaking:  Picked from our oldest vines on our Mt Barker estate. Whole berry fermented with a long cold soak prior to fermentation. The grapes were left on skins for 13 days, with daily hand plunging, pump overs and 02 spearing. The wine was then basket pressed and matured for 16 months in 60% new French oak. Only the best barrels are then selected for our Amos wines. The wine was then bottled with minimal clarification and So2.
